Amber Rock Sugar is obtained by slowly crystallizing a highly concentrated sugar solution. The small sugar crystals bond together to form the characteristic large crystals. The brown colour is achieved by heating the sugar solution beforehand. Amber Rock Sugarr is very popular for sweetening hot drinks.
